 Sloppy Joes

Sloppy Joes are always a favorite with kids, and a fast, easy dish to prepare as you get used to the back-to-school routine. Take your pick of classic (lean) beef or give it a healthy spin with ground turkey or soy

Ingredients
1 lb lean ground beef, turkey, or textured vegetable protein (TVP)
1 small onion, chopped
3/4 cup prepared barbecue sauce
1/4 tsp salt
1/8 tsp pepper
4 hamburger buns, split
Cheese slices, green bell pepper rings (optional)

Directions
Brown ground beef or turkey with onion in large nonstick skillet over medium heat 8 to 10 minutes or until meat is in small crumbles and no longer pink. Pour off drippings. For TVP, follow package instructions.

Stir in barbecue sauce, salt and pepper; heat through. Serve in buns with cheese and bell pepper.
