Fantastic Halibut & Grilled Eggplant

Halibut RecipeThis month, we’re offering two recipes that will work for indoor or outdoor cooking. The quick and easy eggplant slices make an excellent accompaniment to the fish, or may be featured as the star of their own meal. Begin marinating the fish at least two hours before you plan to serve it. Try topping either dish with just a spoonful of tomato or pesto sauce and a few gratings of fresh Parmesan cheese.

Fantastic Halibut

Yield: 4 servings

Ingredients
3 cloves garlic, minced
1 Tbs (15mL) olive oil
1/4 cup (25g) basil, fresh, chopped
1 tsp (6g) salt
1 tsp (4g) pepper
1/4 cup (60mL) fresh lime juice
1 1/2 lbs (680g) halibut fillets or steaks

Directions

Combine all ingredients except for fish in a shallow dish large enough to hold the halibut.

Place fish in the dish and marinate for at least two hours, turning once or twice.

Remove fish from marinade and broil or grill for about 5 minutes on each side (10 minutes total per inch (2.5cm) of thickness). Transfer fish to a serving dish.

Heat remaining marinade in the microwave for one minute; then pour over fish. Serve while hot with rice or couscous.

Grilled Eggplant Slices

Yield: 6 servings

Ingredients
1 large eggplant (about 1 1/4 pounds or 570g)
3 Tbs (45mL) extra virgin olive oil
3 Tbs (45mL) balsamic vinegar
2 cloves garlic, minced or 1/2 tsp (2g) powdered
1/4 tsp (2g) salt
Freshly grated black pepper

Directions
Preheat a gas grill to high or build a fire in a kettle grill.

Slice eggplant 1/3- to 1/2-inch (0.75 to 1.25cm) thick. In a small bowl, mix together the olive oil, balsamic vinegar, garlic, salt, and pepper. Brush both sides of the eggplant slices with the mixture.

Place eggplant on the preheated grill. If you wish to have nice grill lines, turn only once on each side. Grill eggplant slices 10 to 14 minutes.
